Gluten Free Bread
It is so easy!
This bread takes 10 minutes to measure and mix, a bit of time to rise and less than half an hour to bake. We make it almost everyday.
What you will need: gfree flour mix, sugar, salt, gum (guar or xantham), yeast, eggs, olive oil, water.
First is the gfree flour mix. We mix our own and find it works for all of the recipes our family makes. When were where a wheat eating family, I did not have five different kinds of flour, I used one finely ground whole grain wheat flour. Now I use one whole grain rice flour mix. That what works for us and it is simple, I really like simple.
You can use a store bought gluten free flour mix for this recipe. Read the ingredients on the mix, they are not created equal. With gfree baked goods I pay attention to the starch factor. White rice flour, potato starch and tapioca flour are all very starchy and too much isn't that good for you. I would look for a mix with brown rice flour at the top of the ingredients (ingredients are listed in order of quantity, you want more whole grain rice flour in you mix.) If the mix is mostly white rice and other starches keep looking. Some mixes use other gluten free grains; teft, sorghum, millet, garbanzo, etc. These mixes vary in taste. I do NOT recommend a mix with garbanzo, unless your looking for that flavor. One of us is sensitive to teft, so we stay away from that. I would not choose a mix with corn.
Guar gum and xantham gum are used in gfree baking to "replace" the gluten in wheat. We use guar gum, it is made from the guar bean. Xantham gum is made from a bacteria casing. This bacteria is grown on a sugar, usually corn sugar, then dried and ground. If you have any issues with corn do not use xantham gum.
